Saint Louis, MO (February 22, 2013) – Saint Louis’ AWARD WINNING MIXOLOGIST, Matt Seiter, Bar Manager and Chief Liquor Officer at Sanctuaria, recently named BEST DRINK MENU in  St. Louis by the Riverfront Times, BEST COCKTAIL MENU by Alive Magazine and one of the TOP 50 RESTAURANTS IN ST. LOUIS by St. Louis Magazine, will be leaving for the next stop on his national book tour for  “The Dive Bar of Cocktail Bars: How We Rewrote the Rules and Recipes One Cocktail at a Time” on February 24, 2013.  This time he is heading south to New Orleans.  His first stop will be at Bellocq, located in The Hotel Modern, from 5pm – 7pm.  This event is open to the public.

On Monday, February 25, 2013, Seiter will accompany Samogon Liquor Company, the sponsor of his trip, to the 2013 Inland Seafood NOLA Experience from 3pm – 6pm at The Foundary.  He will have copies of his book available for purchase, as well as signing.  The Inland Seafood NOLA Experience is a show case of Inland Seafood’s superior seafood, heritage meats and artisan specialty foods perfectly paired with wine and spirits. It is an opportunity for approximately 300 local chefs, restaurateurs, caterers and other food service professionals to engage with producers, manufacturers and purveyors of the finest foods and spirits available.

From there, Seiter will head to the Shamrock for the United States Bartenders Guild Local Chapter party from 6pm – 9pm.

In “The Dive Bar of Cocktail Bars”, Seiter, recently named BARTENDER OF THE YEAR by Sauce Magazine, divulges his secrets and stories behind the infamous Sanctuaria cocktail menu in this tell-all cocktail guide.  This no holds bar manual provides step-by-step instructions, allowing you to re-create the cocktails you’ve grown to love (or waiting to devour) while tasting your way through the extensive Cocktail Club.  Included are tips and tricks of the trade for tinctures, bitters and other “secret” ingredients used to give your cocktails the mouth-watering goodness Sanctuaria delivers.  Additionally, Seiter explains his choice not to use mass marketed brands in the inventory at Sanctuaria, providing full access to his tasting notes for every spirit he chose.

Christopher Lee brings home the victory at the Taste of St. Louis Chef Battle Royale

Saint Louis, MO (October 2, 2012) – In Good Company, LLC, the company that brought you Café Ventana, Sanctuaria, Diablitos Cantina and Hendricks BBQ would like to their congratulate Executive Chef, Christopher Lee on his victory this past weekend in the Chef Battle Royale at the Taste of St. Louis.

The Taste of St. Louis Culinary committee hand-selected eight of metro St. Louis’ top chefs to participate in the Chef Battle Royale. This bracket-style competition was a head-to-head battle in which each chef was expected to produce his or her best dish (per category) in front of a live audience.

In Round 1 of the competition, Chef Lee competed in “Battle Cheese” against Chef Carl Hazel of 1111 Mississippi.  His winning dish was a fondue crafted with Cherbourg, then topped with braised red onion and beet compote and goat and Bloomsdale stuffed tortellini finished with arugula pesto. Chef Lee scored the highest points ever awarded in the Chef Battle Royale in this round and earned 2 perfect scores.

In Round 2, Elizabeth Schuster of Fifi Coco faced off against Chef Lee in “Battle Mushroom” with his play on Italian coffee, service using a Bialletti style espresso brewer, milk foam and a reduction on Madeira with Shiitake, golden oyster, gray oyster and honseminji.

For the final round, “Battle Beef and Beer”, Chef Lee competed against Jack McMurray of Jack’s Distinctive Taste with a pan seared, herb crusted bone-in rib eye with Stella Artois mustard, butter lettuce tossed in a light mustard Stella Artois vinaigrette, beer battered onion rings and a Stella Artois pan sauce.  Round 3 also included a dessert,  in which Chef Lee created “The King of Ice Cream Sandwiches” using a chocolate chip and black walnut cookie stuffed with Budweiser ice cream.

The Taste of St. Louis is a celebration of the best food, art, music and culture our great city has to offer.

Wil Pelly, Chef de Cuisine, will be at the all new Grand Tasting Event on Saturday sampling pulled pork sliders topped with onion marmalade from the newly opened Hendricks BBQ on Historic Main Street in St. Charles – serving authentic St. Louis style barbeque with southern hospitality.  While Joel Clark, Spirits Guide, at Sanctuaria – recently named on of the Top 50 Restaurants by St. Louis Magazine and Best Drink Menu in St. Louis by the Riverfront Times, will be performing a cocktail demonstration at 4:00pm using a recipe from Sanctuaria’s infamous Cocktail Club Menu.

Christopher Lee, Executive Chef for In Good Company, LLC, will participate in the Chef Battle Royale 2012 with his first challenge on Saturday at 4pm.  The Taste of St. Louis Culinary committee has hand-selected nine of metro St. Louis’ top chefs to take their place in the Chef Battle Royale. Saint Louis, MO (February 8, 2012) – Saint Louis’ renowned and award winning Chef, Christopher Lee and Sous Chef, Tim Brown took 3rd Place in the Professional Division of the  2012 Soulard Mardi Gras Crystal Cajun Cook-off Saturday.  The cook-off featured ten professional chefs and ten amateur chefs competing for the title of Best Cajun/Creole Dish.  Café Ventana’s entry – “Creole Trinity 2” included She Crab Bisque, Cajun Oscar and Pecan Praline Catfish. The recipes will be featured on Café Ventana’s Facebook page later this week.

The All Out Creole Cajun Cook-off was hosted at St. Louis City Hall Rotunda and gave participants two hours to prepare their best entry.

The All Out Creole Cajun Cook-off will be hosted at St. Louis City Hall Rotunda from Noon – 4pm.  The competition will feature ten professional and ten amateur chefs competing in respective categories for the title of best Cajun/Creole dish, giving participants two hours to prepare their prize winning dish.

Padda Restaurant Group and Stone Hill Winery collaborate at the Working Women’s Survival Show

Saint Louis, MO (March 2, 2011) – Saint Louis’ renowned and award winning Chef, Christopher Lee, Executive Chef for Padda Restaurant Group, teamed up with Timothy Witherwax from Stone Hill Winery for three remarkable demonstrations on the food stage this past weekend at the 24th Annual  Working Women’s Survival Show.
Guests gathered for Friday’s delicious presentation “How to pair Cheese and Fruit with Wine” hosted by Café Ventana.  Chef Lee graciously divulged  at home tips for creating the signature Cheese and Fruit plate served at Café Ventana,  always a fan favorite.  Mr. Witherwax complimented the demonstration by providing guests with information on the flavor profiles of various wines and how they interact with specific cheese and fruit.

 

Sanctuaria hosted the Saturday afternoon demonstration, “Tapas and Wine”.  Chef Lee provided plate presentations for some sensational signature dishes; Empanadas with Aji Amarillo, Chicken Skewers, Jalapeno Cornbread and everyone’s favorite, Vaca Frita.  Timothy provided useful insight on how different wine profiles interact with bright Latin American spices.
“Surviving” was easy with Chef Lee and Chuy Arzola’s as they hosted Sundays demonstration “Cinco de Mayo and Sangria”.  Chef Lee gave guests various ideas for hosting an at home Cinco de Mayo party while using many of Chuy Arzola’s much-loved recipes.  Using wine from Stone Hill, Mr. Witherwax crafted White and Red Sangria using the house recipe from Sanctuaria, both Matt Seiter original creations.
Chef Lee and Matt Seiter are working with Stone Hill Winery to craft a specialty wine program that will be exclusive to the Padda Restaurant Group. Additional details will be provided at a later date.
